Matt's Shrimp Pasta
1 pkg. Penne Noodles
Olive oil
red onion diced
Garlic chopped finely
lemon juice
Shrimp (raw, this can be frozen then thawed, but don't get the pre-cooked kind it WILL NOT work out.)
cook the penne noodles to your liking.
While the noodles are cooking, add in a skillet or frying pan: olive oil, onion, and garlic. The amounts on this will vary depending on how much you like onion and garlic. Put enough olive oil to cover the bottom of your frying pan. Saute them until they are slightly golden.
Add the lemon juice. This will be about equal to how much olive oil you put in. mix it well with your spoon (add just a sprinkle of crushed red pepper flakes if you want) then add the shrimp.
Cook the shrimp until it's nice and pink. If you cook the shrimp too long, it will turn very tough so this might take some practice to find just the right pinkness for your liking.
**Keep the heat at a medium level so your other ingredients don't burn.**
Pour over noodles and add some Parmesan cheese! Eat up!

bagels!
Here is a great bagel recipe that I just tried today! It's fabulous!
Homemade bagel recipe
4 cups bread flour
1 Tbls sugar
1 1/2 tsps salt
1 Tbls vegetable oil
2 tsps instant yeast
1-1/4- 1-1/2 cups of warm water.
Mix all the ingredients in a bowl. You don't have to worry about soaking the yeast when you use instant yeast (most yeast sold these days is instant yeast). The dough should feel stiff, but add the extra water if it's really stiff, or you can't get all the dry flour incorporated.
Plop the dough down onto the counter, and knead for about ten minutes, or until the dough is uniform and smooth.
Cut the dough into 8 equal sized balls, and let rest for 10-20 minutes.
Pre heat your oven to 425.
Now, take each of the dough balls and using two hands, roll it into a little snake on the counter. When the snake is longer than the width of your two hands, wrap it around your dominant roiling hand. The dough rope should be wrapped so the overlapping ends are together at your palm, near the start of your fingers. Now take the two overlapping ends, and use your palm to squish/roll these two ends together. Once the dough is fused, you should have a perfectly circular bagel-to-be! This is the only part of the process that can take a little practice before your bagels will look really professional. Don't get discouraged if they don't look perfect, it just takes practice!
Let your bagels rest on the counter for about 20 minutes, and meanwhile, bring a pot of water to boil, and grease a large baking tray lightly. You can just rub a splash of vegetable oil and rub it around.
After the 20 minute wait, your bagels will start to look puffy, and it's time to get them boiling! Add them as many at a time as you can to your boiling water without crowding them. Boil for about a minute, turn them over, and boil for another minute. Take them out a let dry for a minute and then place them on your oiled baking tray. Repeat until all the bagels are boiled.
Add the tray to the oven, and after 10 minutes, flip the bagels over, bake for another ten minutes; and they're done!
Let them cool for at least 20 minutes, get the cream cheese ready, and feast on what's got to be one of the best weekend brunch treats possible!
You can add any toppings you like to these. To make sesame, onions, poppy seed, caraway etc. etc. bagels just have a dry plate ready with the seed or spice topping spread out on it. After the bagels have come out of the boiling water, place them face down onto the seeds, and then place the seed side up onto the baking tray. Bake and flip as for plain bagels.

Award Winning Chili
1-2 cups chopped onion
1 chopped green pepper
2 garlic cloves-chopped
Brown together and set aside.
In large pot mix:
28 oz. can stewed tomatoes or 1 quart bottle of home-canned tomatoes
1 (8 oz.) can tomato sauce
2 cups water
2 Tbs. Chili powder
Heat, mash tomatoes if they are chunky. Add:
1 whole bay leaf
1 Tbs. salt
1/4 tsp. Tabasco
2 (15 oz) cans pinto beans (drained)
1 (32 oz) can chili beans
1 (15 oz) can kidney beans (drained)
1 envelope dry chili seasoning
2 more cups of water
Add browned ingredients and cook entire mixture over low heat for 2 hours, covered.

Cream Cheese Chicken
1 8 oz. package cream cheese
1 can cream of chicken soup
1/2 Cup butter
1 envelope Italian dressing mix
Melt the cream cheese, butter, soup and dressing mix in a sauce pan on the stove. Place chicken in crock pot and pour mixture over it. Cook 6-8 hours on low or 4-6 on high.

Cranberry Chicken
1 16-oz. can cranberry sauce (jellied or whole berry)
1/2 C. Catalina salad dressing
1 envelope onion soup mix
Arrange chicken in a baking dish. Combine cranberry sauce, Catalina dressing, and onion soup mix. Pour over chicken pieces and bake at 350 degrees for 1 hour. You can put it in the crock pot also but the sauce becomes very running if you do.

Breakfast Burritos
small red onion
yellow, red, & green bell peppers
eggs, (I usually like to 90 1 doz. And do extra to put in freezer)
cheese
tortillas
Brown the sausage, dice up the onion and peppers and add to the sausage. Add the eggs and cook them up.
Sprinkle the cheese on the tortilla then spoon the filling onto the tortillas and wrap up folding ends in. Serve
Salsa
30-40 medium tomatoes (8qts)
5 large onions
6 green bell peppers
3 large red bell peppers (opt)
10 large jalapeno peppers (may use canned)
2 yellow hot peppers
2 T. Taco Seasoning
5 long green peppers (anaheim)
1/2 C. Salt
1/2 C. Sugar
10-15 cloves garlic or (1 T.powder)
Use gloves to chop hot peppers, remove seeds. Cook about 3 hours or until thickened. I cook in oven in a roasting pan to thicken sooner and less chance of burning. Stirring occasionally.
Pour into jars and put lids on. Pressure 101b. Pressure for 10 minutes.
Soft Sugar Cookies
1/2 tsp. almond flavoring
2 C. Sugar
1/2 t. salt
2 eggs
4 1/2 C. Flour
1 C sour cream (or 3/4 C buttermilk)
1 tsp. Vanilla
Mix together. Refrigerate. Roll out and cut with cookie cutters, or make balls. Bake until light brown on bottom 350 degrees. Butter frosting - with almond flavoring
Peanut-butter Crisscrosses
1 C. brown sugar
1 tsp. Vanilla
1 1/2 C sifted wheat flour
2 tsp. Soda
1 C. granulated sugar
2 eggs
1 C. Peanut butter
1 1/2 C sifter white flour
1/2 tsp. Salt
Mix together. Spoon onto cookie sheet. Press slightly both directions with fork dipped in granulated sugar.
Bake 350 degrees 10 minutes
Banana Bread
1 cup sugar
Mix well then add:
2 eggs
Mix together 1 tsp. Soda and 4 tsp. Boiling water.
Add to mixture
Add:
1 Cup bananas crushed
Sift together:
2 cups wheat flour and 2 tsp. Baking powder
Add to mixture then add:
1 tsp. Vanilla
Grease bread pans and pour in. Bake 350 degrees - 40 min. or until toothpick comes out clean - not sticky.
Gingerbread
1/2 Cup butter
1/2 Cup sugar
1 egg
1/2cup molasses
3/4 tsp. salt
3/4 tsp. Soda
1/2 tsp. ginger
1/2 tsp. Cinnamon
1/2 cup boiling water
Combined softened butter and sugar creaming til light and fluffy. Add egg and molasses. Beat thoroughly. Sift together dry ingredients and add to molasses mixture alternately with boiling water, beating after each addition. (I mix altogether in Bosch) Bake in well greased 8x8-inch pan in moderate oven (350 degrees) about 35 to 40 minutes or till done. Serve warm.
Snowball Cookies
1/4 cup butter
1/2 cup nuts (pecans or walnuts)
1 tsp. vanilla
1 t water
Form into balls the size of marbles. Put into oven. Bake 325 degrees for 10 minutes. Leave until barely brown.
Remove from oven and roll in powdered sugar while still warm.
Homemade Oreo Cookies (Christena Dummar)
2 eggs
1/3 cup oil
Mix. Roll in hands to make a ball and slightly flatten. Bake at 350 for 8-10 minutes.
Frosting
1 8 oz. package cream cheese
2 cups powdered sugar
1 cube butter
1 tsp vanilla

4 eggs
1/2 cup butter
Bake
Filling:
2 8 02 pkgs of cream cheese
3 cups powdered sugar
1 stick butter
Swedish Nut Cake
1 C sugar
2 eggs
2 tsp. Soda
1 tsp. Vanilla
1 20 oz can crushed pineapple with juice
1/2 C walnuts (chopped)
Mix together well and bake at 350 degrees - 35 min. Cool.
Icing: 8 oz. cream cheese, 1 tsp. Vanilla, 1 stick butter & 1 3/4 C. powdered sugar, Mix togther and spread over cake. Sprinkle 1/2 C chopped walnuts over the icing.
Poppy Seed Dressing- Hillary Dummar
2 tsp. Dry mustard
2/3 Cup cider vinegar
1 small onion chopped small (Red is prettier but can use dry) (I use less)
2 Cups oil (Vegetable, canola, or olive) (I prefer olive oil)
3 Tablespoons poppy seeds
Mix well and chill.
Ice Cream (Grandma Beth's)
3 C sugar
4 Tablespoons cornstarch
Combine above and cook til thickens, stirring so doesn't burn.
Add: 1 can milk
4 eggs (I combine eggs and canned milk in blender before adding)
1 quart half and half ( Can use cream)
2 C milk
5 Tablespoons vanilla
I usually put most ingredients into a gallon bottle and cool in refrigerator. Then put into ice cream freezer next day.
Quick Table Rolls
2 Cups warm water
3 Tablespoons sugar
l/2 Cup butter
4 1/2 C flour
1/2 tsp. Baking soda
1 tsp. Salt
Combine yeast, water, sugar and oil. Let rise until yeas is bubbly. Mix in the rest of the ingredients. Roll into balls and put in greased pan. Let rise. Bake 350 degrees 12-15 minutes
Mix for Pancakes & Waffles
1/3 cup baking powder
4 tsp. Salt
1/2 cup sugar
1 1/4 cup dry milk
3 cubes butter (softened)
Combine all ingredients except butter in Magic Mixer bowl and mix well. Then add softened butter and mix until well blended. Store in a gallon container in refrigerator.
Pancakes: 2 C Mix, 2 C water & 1 egg. Mix together. Let sit for a minute then bake on heated griddle. Makes about 16 4" pancakes.
Waffles: 2 C Mix, 2 C water, 1 egg, 2 Tablespoons Oil. Mix together. Let sit for a minute then bake on hot waffle iron. Makes 2 large waffles.
Ranch Salad Dressing
3 C buttermilk
1/2 tsp. Black pepper
3/4 tsp. Garlic granules (or powder)
1 tsp. onion powder
1 tsp. Salt (May use les if you wish)
1 tsp. Mustard (optional
1 to 2 tablespoons dry parsley crushed fine
1 to 3 tsp. Cider vinegar (or 1 tsp. Cider vinegar & 1 or 2 tsp. Rice vinegar)
Mix together well. Gets thicker after a day in the refrigerator
Chicken Salad (Michelle Dummar's)
1 cup finely diced apple/or grapes
2 cups finely diced celery
1/2 cup nuts (walnuts, almonds, and/or pecans) finely diced
mayonnaise to moisten
salt and pepper to taste
chill over night
Serve on croissants or small rolls.

6 pounds chicken breasts cooked in bullion. Cut into small pieces
Celery, chopped small (I use about 3/4 Cup for 2 Cups of chicken)
1 quart mayonnaise Almonds - slivered or sliced
Salt and pepper to taste Red grapes - cut in halves or quarters

Crushed pineapple (optional if not grapes)
Apples diced/chopped small cashews
Onion chopped small
Pretzel Jello Salad
3 Tablespoons sugar
1/2 Cup melted butter
Mix together in 9x13 baking dish. Then spread out evenly. Bake 7-8 min. at 350 degrees. Cool.
Mix 1 8 oz pkg. Creamed cheese with 1 C powdered sugar and whipped cream (1 pint whipping cream, whipped). Spread over cooled crust. Put in refrigerator to set up partially.
Mix together 1 large pkg. Strawberry jello with 2 cups boiling water. Add 2 pkg frozen strawberries. Break apart berries. Mix well, Let set a few minutes (until partially thickened) and pour over cream mixture.
Refrigerate for 3 hours (or more til set). Cut into squares and serve.
*Variation: Use rasberries and rasberry jello instead of strawberries.
Caesar Salad
Roasted slivered (garlic roasted) almonds
Parmesan cheese - grated
Litehouse - Caesar salad dressing
Break or cut lettuce. Mix in nuts and cheese. Add Caesar dressing just before serving,
Strawberry Vinnigrette Salad
1/2 tsp onion salt
1/2 tsp salt
1 cup oil, blended (Canola &/or olive oil)
1/3 cup raspberry vinegar
1 cup mashed strawberries
1/4 tsp onion powder
In blender, blend just over 1 cup of strawberries. Ad the other ingredients and blend. Use 1,2, or 3 kinds of lettuce plus 1 package of spinach. Sprinkle slivered almonds over the top and slice strawberries. Serve salad, and top with dressing.
Raspberry Vinegar
4 cups cider vinegar
1/2 cup sugar
In saucepan, combine vinegar and sugar; bring almost to a boil over low heat, stirring constantly, until sugar is dissolved. Pour hot vinegar mixture over berries cover jar tightly and let stand at room temperature 48 hours. "Strain through a cheesecloth into a clean bottle or jar. Store in cool dark place" Yield 4 cups vinegar.
(I blended the berries into the vinegar mixture and strained. I put into a quart jar and put into the freezer. I thaw what I need when I make the Strawberry dressing and return the rest of the vinegar to the freezer. You may wish to half the recipe and you would still have enough for several batches of dressing)
Peanut butter cookies (uncooked)
1/2 cup butter
sprinkle of salt (optional)
Combine and boil for 1 minute, Remove from heat
Add:
1 cup peanut butter
1 tsp vanilla
3 cups oats - preferably - old fashioned oats
Mix together and spoon onto sheets of wax paper. Cool to let set. Enjoy
Vanilla Pudding
3 Tablespoons cornstarch
1/4 tsp salt (optional)
2 1/2 cups milk
1 1/2 tsp. Vanilla
Mix sugar, cornstarch and salt. Gradually blend in cold milk. Cook over medium heat stirring constantly until mixture thickens. Cook 2 or 3 minutes more. Eat warm with fruit - peaches, pears or strawberries or chill.
Chocolate Chip Cookies
2 tsp baking powder
2 cups butter
1 1/2 cup brown sugar
2 eggs
2 tsp baking soda
1 tsp salt
1 cup granulated sugar
4 tsp vanilla
2 cups chocolate chips (I use only 1 cup)
Mix together. Scoop out onto cookie sheet. Bake 350 degrees 8 - 10 minutes.
* I usually use half wheat flour and half white flour.
Fajitas
1 red bell pepper1/2 onion
1 jalapeno
several cloves of garlic, chopped.
1 lb boneless, skinless chicken breasts or Steak
Cut chicken into small pieces (or steak into small strips.) Fry chicken or steak in olive oil, lemonjuice and 1 or tsp Montreal stake seasoning. Saute meat, add vegetables and cook just until vegetables are soft. Serve in heated flour tortillas. May use additional seasonings of preference: cumin, chili powder, cayenne pepper, taco seasonings
Homemade Noodles
1/2 teaspoon salt ( optional)
2 Tablespoons water or milk
1 to 1 1/4 cup whole wheat-flour (May use white, or half wheat & half white.) Enough to make a stiff dough
Mix together and roll out very thin on floured surface. Cut into 1/4 inch strips and let dry for about 2 hours.
*Drop into boiling soup or boiling salted water and cook uncovered about 10 minutes. Makes 3 cups cooked noodles.
* I most often don't take time to let the noodles dry before cooking. I just put them immediately into the soup.
Onion Rings (or 8-10 Corn Dogs)
1/2 cup cornmeal
1 1/2 cup flour
11/4 cup sugar
2 tsp salt
4 tsp Baking Powder
1 egg
1 1/4 cup milk
1/4 tsp paprika
Mix together and dip onion rings in to batter. Deep fry 375 degrees.
If doing Corn Dogs, put hot dog on a stick and dip in batter then fry in oil.
Flour Tortillas
1/8 tsp Baking Powder
1 tsp salt
2 T salad oil (or olive oil)
7/8 to 1 cup water
Make stiff dough. Divide into 12 balls. Roll out on floured surface. Dust off excess flour. (I roll out on very lightly oiled surface) Heat ungreased griddle med low heat (First time I spray a little Pam on the pan. Use warm or fry in oil to make hard.)
Tartar Sauce
1 Tbsp sweet relish
1 Tbsp celery chopped fine.
1/2 tsp parlesy flakes
1 1/2 tsp chopped onion
Dash of salt and pepper.
Combine all ingredients and mix well. Cover and refrigerate until ready to serve. Makes 1 cup sauce.
Cocktail Sauce
1Tbsp. Horseradish *
1 Tbsp. chopped onion
1 Tbsp. Lemon juice
1 tsp. Worcestershire sauce (optional)
Combine all ingredients and blend well. Cover and refrigerate until ready to serve. Makes 1 cup sauce. For a spicier sauce, substitute chili sauce for catsup.
*Arby's horsey sauce can be substituted for this. May add more or less to taste.
Pizza Sauce
4 T. oregano
l/2 T. cayenne pepper
1 cup sugar
8 bay leaves
l/2 cup olive oil
3 scant T. basil
8 onions chopped small or pureed
1/2 cup lemon juice
3 T. salt
1 stalk celery (optional)
4 (12 oz tomato paste or 8 6oz) (Gallon cans are available)
If using fresh tomatoes 30 or 40 medium tomatoes. Steam them and put through Victorio juicer. Use 8 quarts. Mix all ingredients and simmer a couple of hours if desire thicker, stirring often. I put it in roaster in oven to thicken Pressure canner quarts cook at 12 lbs. For 25 minutes. I like to do it in quarts and also pints. (Super good spaghetti sauce too. Add stewed tomatoes just before serving if desired chunky)
7-Layer Party Dip
3 cups guacamole
1 1/2 cups sour cream mixed with some taco seasoning to taste
1 cup shredded cheddar cheese
1/2 cup each: chopped tomatoes and green onions
1 (2 1/2 oz) can chopped black olives drained
Tortilla chips
On a 14-inch platter, spread beans evenly to edge. Layer remaining ingredients except chips, in order given leaving about a 1/2 inch layer exposed. Cover & chill until ready to serve. Serve with tortilla chips.
Guacamole
3 large avocados, pitted and mashed
2 medium tomatoes chopped small
2 or 3 Tablespoons salsa - to taste
Melt in Your Mouth Chicken
In bowl mix together:
1 10 oz can Campbell's cream of chicken soup
3/4 C Sour cream
3/4 C Mayonnaise (not miracle whip)
3/4 C grated cheese
2 T. Chopped onions (optional)
Pour over chicken breasts. Bake 2 hours uncovered at 275 degrees. If chicken is frozen bake 2 1/2 hours. In a hurry - Quick variation: Use canned chicken chunks. Then bake 350 degrees for 30 minutes or until bubbly and golden brown.
Toffee Butter Popcorn
1/2 cup Karo syrup
1 1/3 cups sugar (I use brown sugar to taste like carmel)
Bring to rolling boil. Pour over 6 - 9 quarts popped corn.
Hawaiian Meatballs
Juice from l can pineapple tidbits (May use all pineapple juice)
1 cup sugar
1 Tablespoons cornstarch
1/3 cup cider vinegar
1 Tbsp. Soy sauce

1 chicken bullion cube
green pepper (sliced or cut smaller)
In large saucepan combine sugar and cornstarch. Add to juice and water to equal 11/2 cups, vinegar, soy sauce and bullion cube. Mix together and bring to a boil. Cook ti1thickens. Add green bell peppers and pineapple tidbits. Add meatballs and simmer until meatballs are hot.
*Serve with rice *or as an orduevre
Hawaiian Chicken

1 cup sugar
1 Tablespoons cornstarch
1/3 cup cider vinegar
1 Tbsp. Soy sauce
1/4 tsp. ginger
1 chicken bullion cube
green pepper (sliced or cut smaller)
In large saucepan combine sugar and cornstarch. Add juice and water to equal 11/2 cups, vinegar, soy sauce and bullion cube. Mix together and bring to a boil. Cook til thickens. Add green bell peppers and pineapple tidbits. Cut up chicken breasts and coat with the following mixture: Mix together 1/2 c flour, 1 tsp salt, & 1/4 tsp pepper. Then brown chicken in 1/3 cup oil in skillet til golden. Put in 9x13 glass baking dish. Pour sauce over the chicken and bake uncovered for 60 minutes at 350 degrees
*Serve with rice or potatoes.
Hawaiian Haystacks
1/2 cup chopped green onion
1 cup chicken broth
1 20 oz can pineapple tidbits drained
2 C chicken breasts (chopped)
1 cup grated cheese
4 cups cooked rice
1/2 cup slivered almonds
1 pkg chow mein noodles
1/2 cup coconut
3 medlum tomatoes chopped
1 cup green peas
2 cups chopped celery
1/2 cup chopped green pepper
1/2 cup chopped olives
Sunflower seeds ( optional)
Combine soup chicken broth in pan to make a gravy. Add chicken.
Mix and simmer until heated through.
To serve: First stack rice, chow mein noodles, chicken gravy, celery,
ween pepper, etc. Top with plneapple, grated' cheese almonds &
coconut
Put the ingredients in order and let each person stack them up as they wish.
Beef and Broccoli
Steam broccoli only slightly and separately. Set aside
Sauce:
1 1/2 Tablespoon cornstarch
1/4 tsp ginger
dash of cayenne
1 1/4 cup beef broth
Combine and cook until slightly thickened.
Coat broccoli and beef with sauce. Pour over beef and broccoli and serve.
Serve with rice
Delicious Potatoes
In bowl mix together:
1 10 oz cream of chicken soup
3/4 Cup sour cream
3/4 Cup mayonnaise (not miracle whip)
2 Tablespoons chopped onions (Optional)
3/4 Cup grated cheese
Pour over sliced potatoes
Bake uncovered 350 degrees for 1 hour (longer if preferred dryer)
Good served with "Chicken that Melts in your mouth"
Stove Top & Squash Casserole
4 cups zucchini squash cubed small
4 cups crookneck squash cubed small
1 box Stove Top *(1 add 4 or 5 slices crumbled wheat bread)
1 cube butter (melted)
2 -3 cooked chicken breasts cubed (or cut small)
1 small onion chopped small
2 cans cream of chicken soup
Boil carrots and onion. (Small amt of water) Then add zucchini and crookneck squash and boil 3-5 minutes. Stir in soup and chicken. In separate bowl combine the Stove Top and butter. Spread stuffing mix on bottom of a 9x 13 pan. Cover with vegetable mixture. Top with remaining stuffing mixture. Bake 350 degrees for 25
minutes.
*Also very good with extra Stove Top
Baked Lasagna
2 eggs
1 lb cottage cheese
8 oz. cream cheese softened
4 Tbs. Parmesan cheese
2 cups grated cheese
2 tablespoons parsley
Mix together eggs, cheeses and parsley and set askide
Sauce: Your choices, add a dash of cayenne pepper
Cook 1-2 lbs. hamburger. Add sauce. Cover baking dish with a thin layer of meat sauce. Layer (one half) of the noodles, uncooked, over the meat sauce. Cover with 1/2 of the cottage cheese mixture followed with 1/2 of the meat sauce and a sprinkling of grated cheese. Repeat layers. Bake 350 degrees for 45 minutes.
Thin layer of grated cheese on top last few minutes of baking.
Chicken Enchiladas
8-12 flour tortillas
3 cups shredded cheese (cheddar and/or mozzarella)
Sauce:
2 cans cream of chicken or mushroom soup
1 can water or chicken broth
1/2 c chopped onion or 3 Tbsp. dried onion (optional)
1 cup sour cream
1 can chopped green chilies
Mix soups, water, onion, chilies, and sour cream togeter. Then add chicken to mixture. Spread 1 spoonful of sauce with chicken over each tortilla and some shredded cheese. Fold in sides and toll. Put seam side down in 9x13 pan. Pour remaining sauce over the top and sprinkle with cheese. bake to warm 20-30 minutes at 350 degrees.
Potato Bar
Toppings: 1. Hamburger with cream of mushroom soup
2. Chili-chili with beans
3. Broccoli in cheese sauce.
4. Chopped ham in cheese sauce
5. Broccoli chopped very small (fresh)
6. Ranch Dressing
Also: Butter, sour cream, grated cheese.
Serve with green salad.
Taco Soup
2 cans corn
1 can kidney beans (or 2-3 cups cooked pinto beans)
1 can black beans (or 2-3 cups cooked black beans)
Taco seasoning-to taste
1 can diced green chilies
1 lb hamburger cooked (optional)
Combine and heat
Serve with sour cream, shredded cheese, Frito chips and salsa.
*Also very good served with rice.
Yummy Meatballs
1 minced onion
2 grated carrots
2 grated potaotes
1 egg
1/4 cup bread crumbs
salt and pepper
Combine all ingredients, mold into meatballs. Roll in flour and brown in hot oil. Place meatballs in a casserole dish and cover with sauce.
Sauce: 2 cans cream of mushroom (or cream of chicken soup)
Bake in covered dish at 350 degrees for 1 hour.
Twice Baked potatoes
2 Tablespoons butter
1/2 teaspoon salt
2 Tbsp. grated Parmesan cheese
2 Tbsp. grated cheddar cheese
3 green onilns thinly sliced
1/2 cup milk
4 slices bacon cooked and crumbled
Wash potatoes, prick with fork and bake 400 degrees-1hr or until done.
Cut a thin slice from top of each potato. Scoop out pulp into a bowl, mash and mix with butter, hot milk, green onions and seasonings until light and fluffy.
Spoon potato mixture into shells. Sprinkle with cheeses. Place potatoes on baking sheet. Bake 375 degrees until potatoes are hot and cheese is melted, about 15 minutes. Serve immediately.
Pizza Crust
3/4 Cup warm water
1/2 teaspoon sugar
1/2 teaspoon salt
2 Tablespoons oil (preferably olive oil)
2 cups flour
Mix, knead, roll out and put on pan. Do not rise. Bake 10 minutes in 350 degree oven.
Sweet Potato Crunch
2 tsp. vanilla
1/2 cup white supar
2 eggs
1/4 cup melted butter
Mix above ingredients together and put in 6"x10" dish
Topping:
1 cup chopped nuts (walnuts or peanuts)
3/4 cup brown sugar
1/3 cup melted butter
1/2 cup flour
Mix together and spread on top of potato mixture.
Bake 425 degrees 20-25 minutes.
Lemon Cake
1 Lemon cake mix (or yellow)
1 small lemon jello
Sauce:
2 Cups powdered sugar
1 Cup lemon juice
Bake as directed on cake mix.
While hot, immediately poke holes and pour sauce over cake.
Cool and serve.
Alfredo
1 13 oz. evaporated milk
8-10 cloves garlic (crushed or chopped)(to taste)(optional)
3/4 C. Parmesan cheese (more or less to you liking)
Combine in pan heat on medium heat, stirring.
Variations:
1. Fresh or frozen broccoli flowerets or chopped small. Add just minutes before serving or as a side.
2. 1 lb. boneless chicken breasts, cubed and cooked in butter in skillet. Add to sauce before serving.
